About Chef Claire
Founder, Owner, Chef

Growing up in the Orient, Claire's parents would often take her and her siblings to hole-in-the-wall eateries with their vats of steaming noodles and large tanks of moving crabs and lobsters.  She can still vividly recall the smells and colours of soya glazed squid and corn being barbecued by the side of the road. Who knew these adventures would have such a profound impact and eventually influence her desire to pursue a culinary career? 

Claire started her  working in the front end of restaurants: learning the ins and outs of the service industry, how to give patrons an experience to remember, and how to make the elusive perfect martini.  She couldn't resist the lure of the kitchen and she enrolled in the Pierre Dubrulle International Culinary School in Vancouver, British Columbia. 

Upon graduation she cut her teeth working alongside the illustrious John Bishop of Bishops Restaurant in Vancouver. Under his tutelage and the watchful eye of Chef Dennis Green, she blossomed.  After a two year stint as Executive Sous Chef at a private golf club, Claire launched her independent career in catering.  She found it perfectly melded her experience in service with her culinary wizardry.

Over the years many prominent people have come to know and rely on the exceptional quality and flavours of Claire’s creations. She was lead chef for Stan Smith Events at the 2002 Winter Olympics in Salt Lake City, where clients included corporate presidents of Pepsi, American Express and Lufthansa. Claire also catered to Al Pacino while the star was in Northern BC filming "Insomnia".

Even though using fresh, local and seasonal ingredients are a integral part of every dish, Claire is always excited to venture around the world and explore new cuisines and cultures collecting ideas that further translate into her own creations and her global approach to food.

Catering has enabled her to combine her passion for food and people to orchestrate events that her clients never forget.

I got home to find Lyall absolutely over the moon with the way the whole evening turned out, and he said everyone scraped up their plates, so I guess he is right in saying it was a huge success. The fragrance from the sauce for the shortribs was teasing me as I walked through the house and up to bed; it put me in mind of the time I made a mole sauce a few decades ago, in the density and the layers of it. And that grilled cheese & duck - omg! let's do THAT again. Now I am really looking forward to the next party, and may start pushing the agenda a bit. I hope you had a chance to introduce yourself, but I know that can be difficult to do once everything is under way.
 
It was really great to walk out the door with such confidence, and to get such good feedback afterwards, and am willing to bet Lyall eventually shifts a lot of his boys nights from restaurants to home. The food, what I saw and hear about, was divine, the service impeccable, and the kitchen so tidy I could hardly believe itr. Just sorry we left so many animal and furniture obstructions in your way.

On another occasion, Susan commented...

I want to have that fish and lobster sauce every day for a year! What did you crust the fish with – the colour makes me think a fine cornmeal or cornflour Anyway – the whole meal and service was a complete triumph. But I am struggling with a lemon bar addiction that is growing rapidly out of control, so I bet I find time to do a drive-by purchase. That truly was a superb meal and I am really looking forward to the next one. You MUST charge top dollar for the 4 days at Whistler – sauces like that one, and your shortrib sauce are priceless.

Personally, I could not believe how calm you are when in the throes of action that really had to happen rather quickly with Aberthau's  3 - 5 pm set up time.  You just seemed to be there when audio-visual, candles, registry and gift tables and food in the library topics arose.  As for the latter, I knew I could answer for Kristin in terms of 'fine to feed the 'kids' with the adults' but I didn't take that any further and was quite surprised when it was the minister who announced to all before the wedding ceremony that the kids would be fed in the library!!  But as I said, you roll with the punches and our family had a great appreciation for your ability to do that.

Sorry it has taken me so long to tell you how fabulous the party was.  We have had incredible comments about the food, decor, staffing, everything.  The event was seamless from start to finish.  All of the people that came that you had contracted with, said you were the best in the business to work with but I already knew that.  Set up and take was great.  The tent was magnificent and the family style concept was perfect, although it took me 2 hours to do the seating plan it was worth it. 

It was like watching a perfect 10 in the Olympics.  It looks so easy because you are just that good. 

Thanks again and say a special thanks to Tammara.  She was diligent in everything she did and was a pleasure to work with.   The food and everything was perfect.  Thanks for helping with our double celebration.  We had to push the last people out at 2:00am.

Absolutely amazing!

Every piece of food was like butter in our mouths we were both very impressed.

We had an opportunity this past summer to go on a cruise with a friend of ours who spoiled us rotten by giving us the cruise as a wedding gift.  The cruise was on a boat with the Seabourn Yacht Group, very high end and on this trip I ate some of the best food I've ever tasted, we sailed around Croatia and Italy and I must have gained about 25 lbs just eating and drinking.  Loved it.

Your dinner you made for us was right up there with the food we ate on the boat if not better.  I don't think there is a higher compliment from two very big food-lovers.  We were trying to pick our favourite thing and couldn't it was all just too good.

Thank you so much Chef Claire.  You made my husbands' 40th birthday.

Recently we held a VIP Louis XIII event commemorating Legacy Liquor store as the first Louis XIII retailer in Canada.

Our guests are still talking about the fabulous salmon you prepared and several have asked for your recipe. I'm not sure how you managed to make it all seem effortless even when the stove malfunctioned.Please convey our thanks to your staff who were so pleasant and professional and helped to make our wedding day special and hassle free.You have a distinctive style both personal and with your food. I just want to let you know that the catering this morning was outstanding.  The breakfast bite selection was amazing and I heard tons of compliments.  The staff were great – I’m sure they will tell you, but it was pretty challenging for them.  They had to navigate around gear cases, black-out drapes, lighting on the floor.  They did it with smiles and were extremely professional. Thank you very much – it was a pleasure getting to know you and your team.  I’m sure it won’t be the last time we work together.

I just wanted to let you know how much we LOVED your food last night at Beth's! I ate WAY too much, but didn't care at all about the calorie intake as it was all very well worth the experience. The preserved lemon in the orzo salad was pure genious!!!! And the caramelized onion, quite heavenly with all the crunchy sugar bits. Loved it all. We'll definitely keep your card handy and on file.

Recently we held a VIP Louis XIII event commemorating Legacy Liquor store as the first Louis XIII retailer in Canada.  As the spirit we were featuring is extremely premium and unique it was important that we work with a caterer who could skillfully pair cuisine with this distinguished cognac.  Without hesitation we sought out Chef Claire who is our “go to” when we require a very specialized menu.   With her wine knowledge and vast experience, she always does the research and comes up with distinctive, quality cuisine for our events.  She never disappoints and this occasion was no exception.  The food was inspired, delicious and a perfect fit for both the Louis XIII and the Charles Heidsieck champagne we served.  The Mejol Dates stuffed with Foie Gras were to die for. Thanks Chef Claire!
